Motivational Speaker Tries A New Vegetable On For Size!

As a motivational speaker on healthy lifestyles, I keep an open ear when people talk about what they eat or what they don’t like to eat and why.  More times than not I’m dismayed at not only the very limited foods but their unwillingness to try anything new.  Now don’t get me wrong, I get in my food ruts too, but my ruts are very wide and far reaching compared to the narrow and confining ones I hear about!

I challenge myself from time to time to change it up and try a fruit or vegetable that I haven’t tried before. Even if I don’t know what in the world to do with it.  Would you believe pan-fried cactus leaf?   Horrible!  Word of advice: get a recipe to have an idea of how to prepare it!  But you sometimes have to have that wing-it-without-a-net attitude to get through your resistance, you know?  I also get great pleasure motivating family, friends, and anyone who will listen to try a new vegetable on their plate that evening.  Because…

Edible plants  (fruits, vegetables, beans, nuts and seeds) are THE most important foods to expand in our diet!  They are nutrient dense, low calorie, high fiber and protect against disease!!!

If you can’t think of what vegetable to add to increase your intake, I direct you to the link below and be amazed at the number and variety of many colored, odd shaped, tantalizingly textured specimens that make up the edible plant kingdom!  And I don’t want to hear anyone say “Ew!” until you’ve tried it!!

  2. Wow, Polly, when I went to the site you listed, under Leafy greens I found “Lizard’s Tail,” “Fat Hen,” and “Good King Henry” or something like that. Yummy.

    OKay so is this a challenge? If it is, I’ll go to Whole Foods tomorrow and ask for a fat hen.
