Savor Summer’s Abundance – Tomatoes

Nothing says summer like a neighbor’s tomato crop gone wild!  Hopefully you have such a neighbor because vine ripe, home grown tomatoes are one of mother natures most delicious treats.  This motivational speaker believes it’s all about fresh, local, and seasonal foods to support a healthier lifestyle.  When you choose produce at their peak of sweetness, very few other ingredients are needed.  As in the case of tomatoes.  Try some of these suggestions:

  • Try as many new varieties of heirlooms as you can find.  Put them in everything and have them around to snack on with your fresh herbs.
  • Get yourself a dehydrator and dry them for future use.  Trust me, dried heirloom tomatoes at their peak of sweetness are definitely nature’s candy.  You can savor this flavor by using them to make sauces, salsas and soups to freeze and be used at a later date.
  • Make your own simple salsa with chopped tomatoes, onion, cilantro, lime or lemon juice and jalapeno pepper.
  • Sandwiches: Breakfast egg sandwich on a whole wheat english muffin, slice of avocado and luscious red tomato.  Always add a thick slice to your lunch sandwich
  • Simple side salad: Chopped tomato, cucumber and sweet onion drizzled with balsamic vinegar and a tiny amount of crumbled blue cheese
  • Try that Quinoa I blogged about earlier with chopped tomatoes, parsley, crumbled feta, lemon juice and olive oil

  1. Polly, this motivational speaker was motivated to go pop 20 Grape Tomatoes in my mouth half way through your post! Not all at the same time, thank goodness.

  2. Oh Polly you know the way to THIS motivational speaker’s heart!  can I add his one? On one of those Morningstar Farms black bean cakes, melt a little bit of jalepeno pepper cheese and top with a thick slice of tomato and several slices of avocado.  Oh heaven.
