Motivational Speaker Attacked by Healthy Seed Snack!

Hahaha!  Did this motivational speaker get your attention?  This delectably delicious seed snack should make the headlines!  It’s that good!  It’s also that important that we have something healthy to grab when we’re attacked by hunger, especially when we’re traveling.  How many times have we made really unhealthy food choices when we’re gripped by hunger?  I’ve done it many times and it makes me feel awful afterwards.  That’s why my healthy advice to all of you is to be that good girl scout and be prepared the next time hunger hits and we’re nowhere near your exquisitely organically stocked refrigerator.

Nuts and seeds are the perfect snack to sustain us through to the next meal.  They are a powerful, healthy combination of protein, fat, carbohydrate and fiber.  All of that in the palm of your hand.  Important: Just what fits in the palm of your hand.  No more.  They are very calorie dense (ie: high fat) so a little goes a long way.  And I guarantee they will keep your hunger assuaged until mealtime.  Here’s a recipe for my all time favorite seed snack:

Seed Snack Attack!

1 cup raw, hulled sunflower seeds

1 cup raw pumpkin seeds

2 teaspoons reduced sodium tamari (a good quality soy sauce)

1/2 cup organic raisins (optional)

Heat a skillet over medium heat.  Add sunflower seeds and toast, stirring or shaking occasionally, until they start to lightly brown.  Pour into a bowl and add 1 teaspoon of tamari.  Toss to coat.  Set aside.  Reheat same skillet and add pumpkin seeds.  Toast lightly, stirring or shaking occasionally, until puffed and lightly browned.  Pour into same bowl as sunflower seeds and add the other teaspoon of tamari.  Toss all to coat.  Add raisins, if using, and pour  back into still-hot skillet (off the burner).  Allow the tamari to dry out in the warm skillet, stirring from time to time, until dry.  Allow to cool.  Store in an airtight container.

I like to put about a 1/2 cup in a baggie and always carry it in my pocketbook for those hunger attacks!

Remember, stick to just what fits in the palm of your hand….if you can!  Oh, and of course, travel with a bottle of water.
