I Just Tasted Heaven and It’s Coconutty!

My schedule has recently changed and it has opened up the morning hours at home instead of heading IMG_0188out at 6 a.m.  Delicious!  As a motivational speaker on health my daily priorities are 1 – food, 2- fitness, and 3 – fun.  This new luxury of time in the a.m. has inspired me to experiment with different breakfast foods, extend my 5 minute yoga practice to 30 minutes and enjoy the company of my family, kitty cats included. 

This morning I decided to try a combination of foods and spices that were a little more exotic than my typical (yet delicious&nutritious) smoothies, yogurts, fruits&nuts, whole grain toast&almond butters, etc.

O M G !

The soft chewiness of black rice cooked with cinnamon and ginger, mixed with a touch of honey and vanilla, topped with luscious mango, creamy coconut milk and soul-satisfying avocado.  It took my breath away.

Fellow motivational speakers of MSR and all else who read this, I present to you Heaven-In-A-Bowl. 

  • 1 cup uncooked black rice
  • 2 cups water
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 2 tablespoons honey
  • 1 teaspoon pure vanilla extract
  • 2 cups coconut milk
  • 1 ½ cups cubed mango or pineapple
  • 1 ripe avocado, cubed

     Place water, black rice, cinnamon and ginger into a medium-size saucepan.  Cover.  Bring to a boil, reduce heat and simmer for 30 minutes (or until all the liquid has been absorbed).  Stir in honey and vanilla.  Let cool for 5 minutes.  Taste and adjust sweetness, if desired (I like it just the way it is – not too sweet).   Divide rice between 4 bowls and top with coconut milk, mango and avocado.                (Each serving contains 552 calories, 33g fat, 0 cholesterol, 20mg sodium, 35g carbs, 5g fiber, 15g sugars, 4g protein)

I can hear you all now, "WHAT?? 552 calories?? 33g of fat??  Just let me say 3 things: This is considered a meal, not a snack, eat it on a day that you’re going to be active,  the fats are heart healthy (yes, even coconut fat).

Now get up early and shake up your breakfast routine by giving heaven a visit and feel nourished till noon!  Have a delicious day!

Yummo!  I so admire your energy and creativity when it comes to cooking.  I heard that adding a can of coke to meat in a slow cooker adds something…I can't remember what.  So this morning when I put in some sort of meat – tri tip maybe? I didn't have any coke on hand, so I added Fresca.  I'll let you all know how it turns out! (I never claimed to be a cook, let alone a good one).  By the way, don't tell Frenchie – he'll hopefully never know!

  3. Wow! I want to run right out and buy all the ingredients to give this one a try! It looks and sounds AMAZING!!!!  You once (a long time ago) told me to put a little almond milk or something on cooked rice with a little cinnamon – and call it breakfast. I remember I was blown away how good it was and how it was just left over rice from the night before! I LOVE your food creativity!!

Seriously?  Well, you have done it now, Polly.  Your words have inspired me to go out and collect these actual ingredients from the market and use that giant appliance with the burners on it in that room they call a kitchen.  A keynote speaker might be a title I am comfortable with, but cook is not.  But with your instruction (and gorgeous photo)  I think I can do this!   Thank you!!!
