As a motivational speaker on healthy lifestyles, I usually offer scads of advice on how and why we should eat right and exercise every day of our live-long life. But today my friends, I'm just going to keep it simple and post one of my all time favorite (and easy) recipes for this fall season! Here it is:
Dried Fig and Apple Butter
10 dried figs, stems removed
4 apples, peeled, cored, diced
½ cup apple cider or juice
1 Tbl. Finely chopped crystallized ginger
Combine figs, apples, cider and ginger in a saucepan and bring to a boil. Reduce heat and simmer, stirring occasionally, until apples soften, 10-20 minutes.
Partially cover and continue to cook, stirring occasionally, until apples are mushy and falling apart, 20-30 minutes. Puree in a food processor or blender in batches for a really smooth texture .
There it is! High in fiber, just sweet enough, with a zing of ginger, this spread is fantastic on Ezekial toast. I also use it as the jelly part of a PBJ (which I occasionally do for extreme healthy convenience). Try not to eat it out of the bowl with a spoon, though, it is a "natural" sugar and all but it is still sugar so 2 tablespoons would be the equivalent of 1 piece of fruit.
